Baking and Freezing Bread

Recently I read that making sourdough bread, slicing it, freezing it, then defrosting as needed and toasting it reduces the glycemic spike response.  I am not a doctor, have zero medical training but did a bit of research and I kinda feel like freezing and then defrosting and toasting ALL bread  may make a difference. I do love cinnamon rolls. I try not to bake them very often but I've been wanting them.
